Silo London

Originally opening in Brighton, Sussex in 2014 as the worlds first zero-waste restaurant, Silo, from trailblazer chef Doug McMaster moved to Hackney Wick in East London bringing with it a farm to fork zero waste ethos that goes from food through to crockery and the interiors. Describing itself as 'a pre industrial food system', food is foraged and crafted into a 6 course tasting menu where nothing is wasted. Anything that cant be eaten is put into a high tech composting system or re purposed. Case in point, glass wine bottles drunk during previous dinner services have been crushed, moulded and kiln-fired to create the restaurant's wall lights and platters are a reincarnation of plastic bags, whilst some of the furniture is grown from mycelium. It is the OG and still the best!
