Apricity could sit across three of our trend pillars for Togetherness with its philosophy of ‘Conscious Cooking’ and ‘Joyful Dining’. The latest restaurant from multi-award-winning chef owner Chantelle Nicholson and her team it is all about being a restaurant with purpose - creating a sustainable community. Working towards a circular economy they are rethinking the operation of the restaurant with a low waste mindset from the ingredients they source to the displaying of menus and how they wash the dishes. For the team its about finding best practices for a 360 degrees perspective focussed on sharing their learnings for a more collective sustainable industry.
