Zoe Burgess

Zoe Burgess is the founder of Atelier Pip, a London-based drinks consultancy specialising in cocktail development, flavour strategy and drinks education.
With over 15 years’ experience, Zoe has created cocktail programmes and drinks concepts for bars, restaurants, hotels and drinks brands across the UK and Europe. Her work spans independent venues, Michelin-starred restaurants and large-scale hospitality projects, with clients including The Standard, Emberwood, Artfarm, Chishuru, SKOF, Julie’s, Cask Liquid Marketing, Merlet Spirits and Good & Proper Tea.
Zoe has led multi-venue drinks projects for The Standard in London and Brussels, and was previously part of the development team at The Fat Duck. Alongside consultancy work, she develops and delivers trade education, including the Flavour Flip cocktail development programme with Merlet Liqueurs, with workshops delivered in London, Edinburgh and Amsterdam.
Zoe has been recognised as one of Condé Nast Traveller’s “5 tastemakers changing the London cocktail scene.” She is the author of The Cocktail Cabinet: The Art, Science and Pleasure of Mixing the Perfect Drink, nominated for Best New Cocktail Book at Tales of the Cocktail 2023. She writes regularly for The Caterer as their Drinks Doctor and publishes Flavourful, a Substack exploring the structure, iconography and cultural evolution of cocktails.
